What is the syntax being used here within the order template? The green syntax highlighted lines are not HTML, CSS or Javascript, and it's just shown here as if it's completely normal without needing any kind of detail or explanation. How can we be expected to work within a template if I don't know what language this is in order to research more about it?

EDIT: Apparently the language is Liquid, which is noted in the Variables page, but that's an awfully odd place to put it in my opinion. Why would I read the glossary of variable definitions before reading the overview page and why isn't Liquid mentioned anywhere on this page, even as a small mention at the top alongside CSS and HTML?

Hi there Tom Scharstein, thanks for raising this, and apologies for the oversight. You’re right: the syntax shown in the green-highlighted lines is Liquid, a templating language created by Shopify.

For anyone new to Liquid, Shopify’s own documentation is the best place to start:

We’ll also be updating the articles to make it clear up-front that our templates use Liquid and provide an explanation of how Liquid is used in our templates. Thanks again for pointing this out, feedback like this helps us improve the docs for everyone.
