Ability to edit text on checkout pages

We would really like the ability to be able to edit the text on each step/page of the checkout process, to customise it on different affiliate sites.

In particular we want to amend the text under 'Payment Method' in the checkout stages.

  I agree this would be a massive help to us and the reason we haven't launched more sites.
